I just discovered the most incredible line of cookbooks out there by America's Test Kitchen. These guys cook like scientists, they understand what goes into food and the chemistry behind it. They practice evidence based cooking by testing out all the old ways to do things and figure out which one works best.

An example. I just roasted a whole chicken. They tried 14 different recipes, experimenting with temperatures and basting and stuffing and after 13 birds that weren't correct, they nailed it on the 14th. My chicken was incredible.

The correct way to fry an egg? Crack all your eggs into one glass first. Heat your pan until a 1 inch stick of butter melts, foams, and subsides in 60 seconds (many people fry eggs on too high heat) then put in all the eggs at once, immediately COVER the pan and turn heat to low. 3 minutes 30 seconds later with NO flipping your eggs are perfect. Fries the bottom and steams the top and they're perfect.

I bought their big book for 25 bucks on Amazon and it has tips on everything.

Highly highly recommend.
